| Free Organic Vegetarian - Meatless Recipes " Food Saves Lives- Don't waste it" ORGANIC BAKED HOMINY AND CHEESE RECIPE One tablespoon organic butter or drippings, 1 tablespoon organic cornstarch or 2 tablespoons organic flour, 1 cup organic milk, 1/2 teaspoon organic paprika, 1/2 to 1 cup organic cheese grated or cut fine, 2 cups cooked organic hominy, 1/4 cup bread crumbs, 1 teaspoon organic sea salt.Make a sauce of the fat, cornstarch, salt and milk. Add the cheese and paprika to the sauce, arrange the hominy in baking dish and pour lthe sauce over it. Cover with crumbs and bake 20 minutes in a moderate oven. The hominy and cheese may be arranged in layers and the white sauce poured over it if preferred. ORGANIC BAKED OATMEAL AND NUTS RECIPE Two cups cooked organic oatmeal, 1 cup crushed organic peanuts, 1/2 cup organic milk, 1 teaspoon organic vinegar,1/4 teaspoon pepper, 21/2 teaspoons organic sea salt. Mix together and bake in a greased pan 15 minutes. This is enough for five people. ORGANIC CALCUTTA RICE RECIPE Two cupsorganic rice, 2 cups organic tomatoes, 1/2 pound organic cheese, 1 tablespoon organic sea salt. organic peppers and organic celery may be added if desired. Boil rice. Mix it with tomatoes, grated cheese and seasonings and pour into baking disH. Bake half an hour. If peppers or celery are used, cut up and boil with rice. ORGANIC COTTAGE CHEESE AND NUT LOAF RECIPE One cup organic cottage cheese, 1 cup organic nut meats, 1 cup organic stale bread crumbs, juice of 1/2 organic lemon, 1 teaspoon organic sea salt, 1/4 teaspoon organic pepper, 2 tablespoons chopped organic onion, 1 tablespoon organic butter substitute, free range meat drippings or vegetable oils. Mix the cheese, ground nuts, crumbs, lemon juice, salt and pepper. Cook the onion in the fat and a little water until tender. Add to the first mixture the onion and sufficient water or meat stock to moisten. Mix well, pour into a baking dish and brown in the oven. ORGANIC CREAMED PEANUTS AND RICE RECIPE One cup organic rice (uncooked), 2 cups chopped organic peanuts, 1/2 teaspoon organic paprika, 2 teaspoons organic sea salt, white sauce, 3 tablespoons organic flour, 3 tablespoons fat, 3 cups organic milk. Boil rice. Make white sauce Iby mixing 'flour in melted fat and mixing with milk. Stir over fire until it thickens. Mix rice, peanuts and seasoning with sauce, place in greased baking dish and bake for 20 minutes. ORGANIC CURRIED EGGS RECIPE One slice organic onion, 2 tablespoons melted organic butter, l1/2 tablespoons organic cornstarch, 1/2 tablespoon organic flour, 1 teaspoon organic curry powder, 1/2 teaspoon organic sea salt, 1 1/2 cups organic milk, 5 hard boiled free range eggs, cut lengthwise in quarters.Brown the onion in butter and add the flour and cornstarch; stir in the milk, stirring until it thickens, and season. Add the eggs and cook long enough to heat thoroughly and serve at once with hot boiled rice. ORGANIC FONDU RECIPE One-half pound good dry organic cheese, 21/2 tablespoons organic cornstarch, 1 cup organic cream; free range yolks of 4 eggs, whites of 5 eggs.Cook the cornstarch with the cream till thick; turn in th,e cheese, grated and add a little salt. Stir till cool and add the yolks, well beaten. Fold in the whites beaten very stiff. Bake in a papered tin in a hot oven, filling tin only half full. Bake 20 minutes and serve at once as it will fall. ORGANIC PEANUT LOAF RECIPE One cup soft organic bread crumbs (toasted), 3/4 cup organic peanut butter, 1/2 cup organic cooked rice, 1 teaspoon organic sea salt, speck pepper, 1 teaspoon organic poultry seasoning, 1 tablespoon chopped organic parsley. Combine. Bake in a loaf 30 minutes, unmold and serve with tomato sauce or catsup. ORGANIC PEA SOUFFLE RECIPE Four tablespoons organic flour, 4 tablespoons fat, 1 cup organic skim milk, 1 cup mashed cooked organic peas (any kind), 3 free range eggs, 1 teaspoon organic sea salt, 1/4 teaspoon pepper, a few drops of onion juice. Make a white sauce from flour, fat and milk. Mash the chopped peas to a pulp. Beat white and yolks of eggs separately. Mix vegetable pulp, seasonings, sauce and well beaten yolks. . Fold in stiffly beaten whites, put in greased baking dish and bake in slow oven until firm. Lima beans, split peas, cowpeas or fresh Or canned peas may be used. ORGANIC NUT AND CHEESE LOAF RECIPE One cup grated organic cheese, 1 cup organic walnuts or organic hickory nut meats, 1 cup dry organic bread crumbs, 2 tablespoons water, 1 teaspoon organic sea salt, 1/4.teaspoon pepper, 2 tablespoons organic onion, 1 tablespoon oil. Cook onion in cooking oil and water till tender. Strain to mixture of cheese, ground nuts and crumbs. Add seasoning. Bake in a loaf till brown. Garnish with lemon points. ORGANIC VEGETABLE LOAF RECIPE Two cups cooked organic peas or organic beans, 1 cup cooked organic rice, 1 cup organic bread crumbs, 1 free range egg, 1 tablespon fat, 1/2 teaspoon organic sea salt or 1 teaspoon if the rice is unsalted, 1/8 teaspoon organic paprika. Put the peas or beans through a sieve or grind in a meat grinder. Mix all the ingredients well. Form into a loaf and bake until brown. Or croquettes may be formed, rolled in bread crumbs and browned in the oven, Baste frequently with small amounts of liquid containing a tablespoon of fat to 1 cup of hot water. ORGANIC BAKED CORN RECIPE One cup conti flakes, 1 dozen ears of corn, 2 cups milk, 2 eggs, 2 level tablespoons butter, 1 level tablespoon sugar, Y2 level teaspoon salt, ft teaspoon pepper. Draw a sharp knife down each row of kernels and press out the corn pulp. To the beaten eggs add the milk, seasonings, corn pulp and corn flakes, turn at once into an oiled baking dish, set in a pan of hot water, bake in a moderately quick oven 30 to 40 minutes. The egg whites and yolks may be beaten separately, the stiffly beaten whites folded into the mixture just before placing in the oven if preferred. ORGANIC CORN FRITTERS RECIPE One can organic corn, 2 free range eggs, 2 teaspoon organicbaking powder, salt and white pepper to taste, 1 1/3 cups organic flour. Throughly stir all the ingredients together. Drop spoonfuls in hot cooking oil or lard. ORGANIC CORN OYSTERS RECIPE One-half can organic corn, 1 free range egg, 2 tablespoons organic flour, 2 tablespoons organic milk, 1/2 teaspoon organic baking powder. Season with salt and white pepper to taste. Dip small spoonfuls on buttered pan in the shape of oysters and fry. ORGANIC CREAMED CABBAGE RECIPE Select a tender head of organic cabbage. Cut in sixths, lengthwise and remove the heart. Boil or steam the rest until tender. Drain thoroughly and cut in small pieces but do not mince. Dress with white sauce and put back in skillet to keep hot till served. ORGANIC CREAMED ONIONS RECIPE Skin the organic onions, use small ones if possible, and put them in a sauce pan with a piece of organic butter and a little water. Let them cook thoroughly, then strain and put them back in the sauce pan, with a piece of butter; when this is melted add a little organic flour, pepper and salt, and just before serving a small quantity of organic cream or organic milk. When this is added, the sauce must on no account be allowed to reach boiling point. ORGANIC CREAMED PARSNIPS RECIPE Scrape and boil till tender 6 medium sized organic parsnips. Slice lengthwise, put back in skillet over fire and dress with 2 tablespoons of organic butter, organic pepper and organic sea salt to taste, and a little finely minced organic parsley. Stir until butter boils. Remove parsnips and lay in serving dish. Add to butter, 3 tablespoons cream in which has been dissolved a good pinch of cornstarch; allow to boil up well once and pour over parsnips. ORGANIC FRIED EGGPLANT RECIPE Pare and slice the organic eggplant as desired and dip at once into free range egg (previously seasoned with salt and pepper) and then into organic cornstarch, seeing to it that every part is well covered. Fry in deep hot fat to a rich brown. Lay on brown paper until served to absorb any extra grease. Eggplant cooked in this way will be found very delicious and digestible. ORGANIC HUNGARIAN POTATOES RECIPES One quart cooked organic potatoes, 3 tablespoons fat, 1 tablespoon chopped organic onion, 2 tablespoons organic parsley, 2 cups organic tomatoes, 1 teaspoon organic sea salt, 1/4 teaspoon organic paprika. Brown onion slightly in fat and add to diced potatoes. Add remaining ingredients, except parsley, to potatoes and put in greabed pan. Bake covered in a moderate oven 45 minutes. Sprinkle top with chopped parsley and serve. ORGANIC POTATO AU ·GRATIN RECIPE Six medium sized boiled or steamed organic potatoes, 2 cups organic white sauce, 1/2 cup grated organic cheese, 1/2 cup organic crumbs. Put a layer of potatoes in a greased baking dish. Cover with 1/2 the white sauce and 1/2 cheese. Repeat, making three layers, cover with crumbs and bake 1/2 hour in a moderate oven. NOTE.-Potatoes are prepared by substituting slices of hard cooked free range eggs for the cheese in the above recipe for potato au gratin. ORGANIC POTATOES BAKED IN HALF SHELL RECIPE Select six medium sized organic potatoes and bake. Remove from oven, cut slice from top of each and scoop out inside. Mash, add two tablespoons organic butter, salt, pepper and 3 tablespoons organic milk, refill skins and bake 5 to 8 minutes in very hot oven. Potatoes may be sprinkled with grated cheese before putting in oven. ORGANIC POTATO FISH LOAF RECIPE One pint of mashed organic potatoes, 1 cup cooked organic fish, chopped, salt, pepper, 1/2 cup organic milk, 2 tablespoons fat, 2 free range eggs. Mix the potatoes, fish and seasonings. Add the milk, beaten eggs and melted fat. Place in a greased pan and bake in a moderate oven from 25 to 30 minutes. ORGANIC POTATO PEANUT LOAF RECIPE One cup mashed organic potatoes, l1/2 cup ground organic peanuts, 2 free range eggs, 1/2 cup organic milk, 2 tablespoons cooking oil, 1/2 teaspoon organic sea salt, 1 teaspoon pepper:To mashed potatoes add the peanuts, eggs slightly beaten, milk, oil and seasonings. Mix well and place in greased cups. Set in pan of hot water and bake until firm. ORGANIC POTATO PUFF RECIPE Two cups seasoned mashed organic potatoes, 2 free range egg yolks beaten, 1 1/3 cup organc cream or organd milk, 2 free range egg whites beaten stiff. Add yolks to mashed potato, add milk or cream and more seasoning if necessary. Fold in beaten whites and put in oiled baking dish. Bake in a moderately hot oven till brown on top. |
